Walk the Talk...Day 22 Update


Robert Frost has always been one of my favorite poets, and i was recently reminded of a quote, "The best way out is always through". It was such a well timed quote as i find myself struggling as i enter the last third of my 30 Day Challenge. 30 Days. What can you accomplish in 30 Days? A lot of things, but one thing you cannot accomplish is anything if you quit. I am feeling renewed by the words of Mr. Frost, and I plan to stay the course and continue on this challenge and path that I have set for myself.

Say it with me...."the best way out is always through." What does this mean? Well, to be honest, it could mean many things to many people depending on their experiences and biases. To me, right now, it means that the only way to get to the end of my 30 day challenge, is to keep going through it. Keep going with tracking my food intake in my food journal. Keep going with weekly meal planning and prep. Keep going with adding exercise into my weekly routine. Keep going, keep going, keep going. If you stop, you will never get where you want to go. So here I am, not stopping, still going, reaching for my goal. One more time for good measure, "the best way out is always through."

As usual, I would like to share a little tidbit about one of the meals I prepared over the past week. I had an exceptionally busy schedule this past week and I found myself needing to prepare quick meals in amounts large enough to feed my little family of 4. I didn't have time to make "my" dinner and then make everyone else too. What is a gal to do? THIS gal headed to her pantry for a quick meal fix by way of Hamburger Helper. Have you ever seen a Hamburger Helper box? It gives you the cooking directions, but it also gives you some suggestions on ways to kick up the flavor, pump up the volume and, usually, add in some vegetable matter. This time, I made my own choices for making this quick meal as healthy as it could be. I didn't have many options to choose from, since I cleaned out most of these items from my pantry when I first started the 30 Day Challenge, but the box I had was Cajun Chicken. Now personally I use the box's title meat as a suggestion, and I just use whatever I have on hand. This time, I used the Cajun Chicken box with 99% lean ground turkey. In order to save myself, and my family, the Sodium overload that these packaged quick meals have, I only used half of the packet of seasoning, and added my own fresh seasonings, such as ground Black Pepper. Just use whatever you like. I then proceeded to cook the meat as directed, and followed the rest of the steps. Anytime these boxed meals call for milk, I always opt for Fat Free. This saves us all a few calories, some fat grams, and I haven't noticed any complications. During the simmering step, I added in diced Zucchini, chopped fresh tomatoes, diced green chilies and shredded baby carrots. Why, you ask, did I use shredded baby carrots? Well, I wanted small amounts of carrots that would blend with the rice (so my toddlers wouldn't see it) and I didn't have regular sized carrots. Improvise! I just let all that stuff simmer and when the timer went off, I had a good amount of food, done fast to offer myself and my family and it was healthier than if I had just followed the directions. Now that is a win in my book! :-)
